Directions

Step 1

Heat oil in a large pot over medium heat. Add onions, salt and pepper, and cook until onions have softened, 8-10 minutes. Add dried herbs or spice, and cook for an additional minute.

Step 2

Add beans, tomatoes, and broth, and bring to a boil. Stir in pasta, and cook until pasta is just tender. Add vinegar, and season, to taste, with additional salt and pepper. Serve with bread, crackers, or homemade croutons.

Cook's Notes

Any dark, leafy green is a great addition to a pantry soup. Just add it in the last 5 minutes of cooking. You can also add cooked ground beef, cooked stew meat, or cooked shredded or canned chicken.
