Healthy Spinach Bacon Quiche

Quiche is one of those brunch foods that really takes your breakfast to the next level. For this healthy quiche, we used ingredients like spinach, turkey bacon, mozzarella cheese, onion, almond milk and of course, Eggland’s Best eggs to create a variety of delicious flavors.

Directions

Step 1

Preheat oven to 350°F and grease 9-inch pie dish.

Step 2

In a medium-sized bowl, mix together 2 cups almond flour, 1 Tbsp minced garlic, 1/3 cup olive oil, 1/2 tsp salt, 1/4 tsp pepper, and 2 Tbsp water until ball forms for the crust.

Step 3

Press crust into pie dish evenly. Bake for 15-20 minutes or until slightly golden brown.

Step 4

While crust is baking, sauté onions and turkey bacon in olive oil on medium-high heat.

Step 5

Once cooked through, add in spinach until wilted. Turn off heat and let cool.

Step 6

In a large bowl, whisk together 6 eggs, 1 cup almond milk, 1/2 cup cheese, 1/2 tsp salt, and 1/2 tsp pepper.

Step 7

Add in turkey bacon mixture and pour into slightly cooled crust. It can still be warm, just not hot.

Step 8

Add the remaining 1/2 cup cheese on top and bake for 35-40 minutes or until no longer jiggly. A knife inserted into the center should come out clean.

Step 9

Let cool 20 minutes before cutting into it.

Cook's Notes

This recipe is gluten-free as written. However, you may substitute white flour for almond flour if you don't need this recipe to be gluten-free. You may also substitute any milk to replace almond milk and pork bacon for the turkey bacon, as desired. You may use any type of shredded cheese in this recipe.
