Step 1

Pat dry the pork loin roast (lucky because pigs root forward - looking into the new year, not back), then season with salt, pepper, and smoked paprika on all sides.

Step 2

In heavy bottom pan, add olive oil and heat to shimmering. Sear pork loin on all sides, for about 3 minutes each side.

Step 3

Add sauerkraut to slow cooker or dutch oven pan. (For less tangy sauerkraut, rinse first.)

Step 4

Add apple juice, chopped onion, sliced apples (red for luck in love and green for luck in finances), and brown sugar. Stir to combine.

Step 5

Sprinkle on caraway seeds and add seared pork loin on top.

Step 6

Slow Cooker Instructions: Cover and cook on low for 8-9 hours. For extra luck, add chopped kale (symbolic for cold, hard cash) during the last 1 hour.

Step 7

Oven Instructions: Cover and cook at 325° for 2 hours or until meat thermometer reads between 145-150°F. For extra luck, stir in chopped kale (symbolic for cold, hard cash) 1/2 hour before done.

Step 8

Let pork rest 15 minutes before slicing.
