Our Mandarin Upside Down Cake is an easy-to-make rustic dessert that requires no frosting or fancy decorations to look and taste amazing. This is a modern twist on the classic pineapple upside down cake that shows off the beautiful colors and flavors of Peelz Mandarins. Your family will flip over this delicious cake!

Step 1

Slice 4 Peelz Mandarins into thin slices, set aside

Step 2

Juice and Zest 4-6 Peelz Mandarins to equal ½ cup of juice

Step 3

Preheat oven to 350 degrees

Step 4

Spray a 10 inch cake pan with Food Club Cooking Spray for Baking with Flour

Step 5

Melt butter and pour into cake pan

Step 6

Sprinkle brown sugar over melted butter

Step 7

Lay sliced Peelz Mandarins on top of butter

Step 8

Combine Food Club Yellow Cake Mix with 1/3 cup oil, ½ cup water, ½ cup Peelz Mandarins juice, and 3 eggs and beat at medium speed for 2 minutes

Step 9

Pour cake batter on top of Peelz Mandarins slices

Step 10

Bake for 40 minutes or until toothpick comes out clean

Step 11

Remove cake from oven and place on wire rack to cool, about 45 minutes

Step 12

Once cooled, lay cake stand on top of cake. Flip cake pan over while firmly holding the cake stand. Slowly remove cake pan.

Step 13

Dust with confectioners sugar, optional. Serve at room temperature.

Cook's Notes

Adding Peelz Mandarins juice and zest makes the flavor of the entire cake a delicious, sweet mandarin flavor. We substituted the one cup of water from the original recipe on the Food Club Yellow Cake Mix with ½ cup water and ½ cup Peelz Mandarins juice and zest. If you prefer a milder flavor, decrease the juice and increase the water. If you prefer a stronger mandarin flavor, increase the juice and decrease the water. The total liquid count should equal 1 cup. Leave the peel on the mandarins for a delicious candied peel. The brown sugar and butter works together to caramelize the mandarins for an amazing candied peel. The mandarins are placed in a single layer, in a circular pattern over the brown sugar and melted butter. The mandarins shrink when baked so if you prefer more mandarins on top, simply overlap the mandarins from the beginning. Serve at room temperature, with or without a dusting of confectioner’s sugar.
