It features oven-baked cod seasoned with Acme Fresh Market Ancho Chili Fiesta Seasoning and paired with a vibrant, 10 Minute Cilantro Lime Slaw. Ready in under 30 minutes, this easy recipe delivers all the flavor of classic Baja tacos in a lighter, health-conscious package.

Step 1

Preheat oven to 375° F.

Step 2

To make the Cilantro Lime Cabbage Slaw: Add green cabbage, red cabbage, juice of one lime, cilantro, honey, salt and pepper. Gently toss to coat and set aside.

Step 3

Pat the fish dry with a paper towel. Place on a parchment-lined baking sheet.

Step 4

Rub olive oil on both sides of the fish. Season both sides of cod with Acme Fresh Market Ancho Chili Fiesta Seasoning and gently rub in.

Step 5

Bake at 375°F for 10-12 minutes until internal temperature reaches 145 degrees F and fish easily flakes apart.

Step 6

To heat corn tortillas: heat a skillet over medium heat, spray both sides of tortillas with cooking spray, and cook for 1-2 minutes on both sides until browned.

Step 7

Assemble your healthy baja fish tacos with the cilantro lime cole slaw, fresh pico de Gallo, avocado, cotija cheese, and avocado ranch dressing.

Cook's Notes

This recipe is usually baked, but you can also pan-fry the cod if preferred. Heat oil in a cast-iron skillet over medium-high until hot and shiny. Carefully add the fish, lower the heat to medium, and cook for 2-3 minutes until golden. Flip the cod, and continue cooking for about 2 more minutes until it reaches 145 degrees F and flakes easily with a fork.
