This recipe combines hearty shrimp with a creamy garlic butter Tuscan sauce and a hearty serving of tomatoes and fresh spinach. Directions

Step 1

Thaw shrimp in colander under cold running water.

Step 2

Prepare pasta of your choice until al-dente, drain.

Step 3

Meanwhile, in a large skillet, melt 2 Tbsp butter and oil from sun-dried tomatoes over medium-high heat.

Step 4

Add shrimp and 1 clove garlic, season with salt & pepper and cook for 2-4 minutes, until shrimp is pink and cooked through. Remove shrimp and set aside.

Step 5

Add 1 Tbsp butter and flour to skillet, cook for 1-2 minutes, stirring until smooth.

Step 6

Add remaining garlic and cook for 30 seconds or until fragrant.

Step 7

Stir in the cream, juice from 1 lemon wedge (approx ½ tsp), sun-dried tomatoes, and Italian seasoning. Simmer for 2 minutes until sauce thickens.

Step 8

Return cooked shrimp to skillet and fold in spinach and basil. Cook until spinach wilts, about 2 minutes.

Step 9

Serve immediately over cooked pasta and top with freshly grated Parmesan cheese and a squeeze of a lemon juice wedge (if desired).

Your family will think you worked in the kitchen all day to create this gourmet meal when in fact the shrimp takes less than 4 minutes to cook. The 8 ounces of spinach seems like a lot but trust us, it cooks down quickly into the creamy Tuscan sauce. Just continue to fold the shrimp into the sauce for 2 minutes. If you prefer extra sauce, you can add another cup of heavy whipping cream to this recipe and another dash of Acme Fresh Market Italian seasoning. Instead of heavy whipping cream, you can substitute Half & Half or milk for a lighter sauce. Choose your favorite pasta for this recipe. We choose Food Club Linguine because the size and structure holds the sauce well. To keep your pasta from sticking, you can add a splash of olive oil. However, the pasta and shrimp sauce should be done cooking at about the same time in this recipe. Add freshly grated Parmesan cheese and a splash of lemon juice, if desired.
